I travel to a lot of different countries yet I’ve returned again and again to the shores of the US. On my last visit, I had my shortlist of must-try foods and managed to knock off: biscuits and gravy, chicken-fried steak, chili (at an actual chili contest), a Philly steak and cheese sandwich, a smoked turkey leg at the renaissance festival in Michigan and Twinkies.

Some of those dishes were incredible. Artery hardening sure, (Philly steak cheese, I’m looking at you!), but also delicious. Others weren’t what I expected. Twinkies are an ‘acquired’ taste. But next on the list of must-try:

A Louisiana crawfish boil-up.

What could go wrong here? I love New Zealand crayfish and this appears to be a massive pile of smaller freshwater crayfish that are boiled in a super spicy broth along with delicious looking sausage (yum), sweetcorn (yum), and potatoes (meh). I like all the individual components so I’m seeing good things here when you add it all together. Apparently, they boil it all up together…
